Description

Enter the North African souk; packed full of heady exotic spices and let us guide you step by step through cooking a Moroccan feast whilst learning top tips for richly flavoured couscous recipes & tagine cooking.

Our Moroccan cookery course will teach you how to prepare a sumptuous feast with all the lively fragrances of the spice market and you will learn how to preserve your own lemons at home.

We start with the Mezze course: small treats to excite the palate, including the secrets to preserving your own lemons at home (perfect gifts for friends for any celebration).

Then we move on to two starters: Aubergine Zaalouk and the legendary Pastilla, a filo pastry pie of fish and seafood. The theatre of the feast really comes alive with the main course;  iconic Preserved Lemon and Green Olive Chicken Tagine accompanied by authentic Moroccan couscous flavours, finished with Traditional Pancakes (Baghrir) dipped in Butter and Honey  and Moroccan mint tea.

This Moroccan feast is great fun to cook and ideal for sharing with large parties.
